He was born and raised in the culinary Mecca of Florence, Italy, where he received his initial training and discovered his passion for cooking. Wanderlust grabbed him at an early age and he spent years roaming the globe, including several stints in the kitchens of some of the world’s most exclusive cruise lines.
He then worked in several restaurants in San Francisco before wandering to Santa Fe and opening his own restaurant. The restaurant had an 11 year run before his love of travel took him on a life-changing pilgrimage to India. The people, the spirit of the place, and the tastes of Indian cuisine made a lasting impression on him.
Of course, our Chef draws from his Italian roots as well. With matter-of-fact pride, he will tell you that his Bolognese sauce is the best in the world, and his Osso Bucco is well known locally from his many years at the Alpine Tavern in Vail.
The Chef’s breakfast will be the perfect way to jump-start to your ski day. During your stay, sample the variety of fresh, tantalizing menus – everything from Eggs Benedict to his amazing pancakes with fresh fruit and whipping cream or Chef’s special Frittata with fresh vegetables.
You will hear anything from flamenco to Italian opera (and even Pink Floyd if you will allow him!) in his kitchen as he prepares one of his eclectic specialties or whatever you have requested. His extensive knowledge of wine will make sure that the right grape is chosen to complement the food and that each evening’s meal is unforgettable.
